Baby Swiss
Semi-soft, creamy cheese with a buttery, slightly nutty and sweet taste. We recommend pairing our Lake County Sauvignon Blanc to balance the creamy textures of the cheese.

Blue Cheeses
Soft, rindless cheese made from cow’s milk with an edible salty exterior and white interior with blue veining. Danish blue is a very mild, one-dimensional cheese while some French cheeses such as Blue d’Auvergne and Bleu des Causses have fuller, more complex flavours. Blue cheeses pair well with our White Mirage or our Cabernet Sauvignons or Cabernet-Syrah.

Brie
Made from cow’s milk with a soft, bloomy rind and a buttery center. Depending on the origins and maturation level, Brie cheese can range from a mild taste (American) to beefy, nutty, garlicky flavours with mushroom aromas (French). We recommend our Cellar Select Cabernet Sauvignons or our Mirage. The tannins from the wine will contrast with the creamy texture of the cheese.

Cambozola
Brand-named German cheese that is a combination of Camembert and Gorgonzola. Cambozola has a soft-ripened rind and very mild characters. Try it with our Cellar Select Cabernet Sauvignon, Syrah or Mirage.

Camembert
Soft ripened, bloomy rind. Flavours can range from a slightly mushroomy aroma to the huge flavours of mushroom, garlic and truffle found in the cheeses of Camembert de Normandie. We recommend our Old Vine Zinfandel or Syrah, to complement the range of flavours and aromas without overpowering them.

Cheddar
Made from cow’s milk with a firm, pressed rind and a sweet, rich interior. Cheddar will pair well with a range of our red wines such as our Old Vine Zinfandel, Mirage, Cabernet Sauvignons, Cabernet-Syrah and Syrah will all complement the sweet flavours.

Cheshire
A firm pressed, cloth-wrapped rind with a firm, yet crumbly texture. Cheshire usually has a tangy, mild flavour. Enjoy this cheese with our White Mirage.

Chevre
Fresh goat cheeses pair well with our Old Vine Zinfandel and Mirage. For more mature and dry goat cheeses choose our Sauvignon Blancs. For those spiced up by their package (garlic, leaves, herbs), opt for our Old Vine Zinfandel.

Dry Jack
Hard, pale yellow cheese made from cow’s milk with a sharp, nutty flavour. We recommend pairing this cheese with our Old Vine Zinfandel.

Edam
Cheese from the Netherlands made from partly skimmed cow’s milk. Edam has a buff-coloured rind, smooth texture, and slightly tangy flavour. We recommend enjoying this cheese with our 2001 and 2002 Chardonnay.

Emmental
This cooked cheese is made from partly skimmed cow’s milk. The French version is a semi-firm cheese with a slightly chewy texture and sweet, buttery, nutty, and fruity flavours while the Swiss is similar, yet milder in taste. We recommend our Mirage and our Old Vine Zinfandels.

Feta
Made from sheep’s milk, Feta is a young, crumbly cheese that is pickled in brine. Try our Syrah or Mirage to contrast with the salty flavours and light texture of the cheese.

Fresh Mozzarella
Fresh, handmade Italian mozzarella has a springy, pull-apart texture with a moist, sweet, nutty, and buttery taste. We recommend pairing fresh cheeses with our Sauvignon Blancs, Chardonnays and White Mirage.

Gorgonzola
Of Italian origin, Gorgonzola is a cow’s-milk blue cheese with a soft, washed rind and a creamy interior. Gorgonzola has a spicy, earthy flavour and powerful aroma. We recommend pairing this cheese with our Cabernet Sauvignons, best choices are the 2000 Mt. Oso and 2000 Napa Valley.

Grana Padano
A hard, straw-coloured cooked cheese made from cow’s milk. Grana Padano is very similar to Parmesan, though milder in flavour. Grana Padano will pair well with our Cabernet Sauvignon Cellar Select.

Gruyere
A cooked, pressed Swiss cheese made from cow’s milk, Gruyere has a pebbled rind and a smooth, creamy interior. The flavour can be described as assertive, with hints of fruit and nuts and a fruity aroma. We recommend this cheese with our Old Vine Zinfandels.

Havarti
Made from whole cow’s milk, Havarti is a mild rindless cheese with tiny apertures throughout. Havarti is often flavoured with herbs, spices or peppers and would pair well with our Chardonnays or our Old Vine Zinfandel.

Manchego
A Spanish pressed cheese made from sheep’s milk, Manchego has a natural rind and a mild, nutty flavour. A young Manchego will pair well with our Merlots while an aged version will match well with our 2000 Mt Oso and 2000 Napa Valley Cabernet Sauvignon.

Maytag Blue
An American blue cheese handmade from unpasteurized cow’s milk, Maytag Blue has a peppery flavour with a creamy texture. Our Old Vine Zinfandel will complement the pepper flavours perfectly.

Monterey Jack
An American original, Monterey Jack (or Sonoma Jack) is made from pasteurized cow’s milk. Rindless, it is very soft with a white, gentle texture and an acidic tang. Chopped Jalapeño peppers are sometimes added during the cheesemaking process for a touch of spice. For this cheese, we recommend our Old Vine Zinfandel or our Mirage.

Morbier
A semi-soft, pressed cheese made from cow’s milk. The interior is two layers of white paste, separated by a thin flavourless layer of ash. The flavours of nuts and fruit would pair well with our White Mirage, or our Chardonnays.

Italian cheese made from water buffalo milk. Mozzarella Bufala is a sweet cheese with a pulled, springy texture. It would be paired well with our White Mirage.

Pecorino Romano
A hard pressed cheese made from sheep’s milk. Pecorino Romano has a hard, granular texture with intense flavours of pepper. We recommend pairing this cheese with full-bodied red wines, like our Cabernet Sauvignons and our Cabernet-Syrah blends.

Provolone
Italian cheese made from cow’s milk with a firm, natural rind and a sharp flavour. This cheese will pair well with our Cabernet Sauvignons and our blends, Mirage and Cabernet-Syrah.

Raclette
Raclette is a cooked, pressed cheese of Swiss origins with a dark, beige rind. Raclette has fruity aromas, a creamy mouthfeel, and a full, beefy flavour. This cheese will pair well with our Sauvignon Blancs and Chardonnays.

Roquefort
A French blue cheese made from unpasteurized sheep’s milk. This rindless cheese has a crumbly, moist interior with a complex, spicy flavour. Strong red wines, sweet whites or ports will match well with Roquefort. Keep watching for our port series to be released in the near future. In the mean time, our Cabernet Sauvginons and Cabernet-Syrah blend pair very well.
